Chicken on a Maple Plank
Ingredients
1 1/2 cups of Fulton's Maple Chili Sauce
3/4 cup apple or lemon juice
1 tsp chopped garlic
1 tsp salt
1 1/2 tsp prepared horseradish (optional)
1. Mix ingredients together.
2. Set aside 1/2 of the mixture.
3. Pour the remaining marinade over 4 chicken breasts or thighs, turning to coat.
4. Cover and marinade in the refrigerator for 5 minutes.
5. Heat grill.
6. Place chicken on maple plank (pre-soaked).
7. Turn chicken and baste with marinade, grilling until juices run clear.
8. Heat remaining marinade in a small saucepan and serve with chicken.
Variation: Cube chicken and add chunks of onions, peppers and mushrooms, zucchini etc to make skewers.
Lamb on a Maple Plank
Ingredients
2 tbsp olive oil
2 tbsp balsamic vinegar
2 tbsp amber maple syrup
1 tsp chopped garlic
1 tsp fresh thyme
1 tbsp fresh rosemary
1/4 tsp salt
1/4 tsp black pepper
Combine above ingredients.
Brush 8 lamb chops with half the oil mixture.
Place on pre-soaked maple plank in a pre-heated BBQ.
Turn meat when half done then brush with remaining oil mixture. Medium - 160 C
