Pork Tenderloin with Spices and Maple Syrup

PREP TIME: 10 mins | TOTAL TIME: 2 hours 30 mins | SERVINGS: 4

INGREDIENTS

2 pork tenderloin fillets (about 11/4 lbs each)
2 Tbsp. Fulton’s Organic Maple Syrup
(also good with chicken)

Marinade
1 tbsp. sunflower oil
2 tbsp. balsamic vinegar
1 tbsp. fruit juice (i.e. apple)
2 tbsp. soy sauce
2 small scallions, minced
1 clove garlic, minced
1 tsp. grated fresh ginger
8 drops of Tabasco sauce
1 tsp. blend of star anise powder, black pepper, and ground pink peppercorns

INSTRUCTIONS

At least two hours before grilling, combine marinade ingredients and marinade tenderloins in half of the mixture.

Grill meat over medium-hot embers.

When meat is nearly cooked, add maple syrup to the remaining marinade and baste the meat, taking care not to let the flames burn it.
