Sugar Bush Cocoa


2 cups (500ml) scalded milk        

2 tbsp (30ml) cocoa        

2 cups (500ml) boiling water

1/8 tsp (0.75ml) salt, optional

2 tbsp (30ml) Ontario maple syrup


Scald milk.   Mix cocoa, maple syrup and boiling water slowly.

Boil gently for 5 minutes, stirring constantly.  Add scalded milk.

Beat with a rotary beater before serving until light and foamy.
