Maple Carrot Soup

PREP TIME: 10 mins | TOTAL TIME: 60 mins | SERVINGS: 4 – 6

INGREDIENTS

1/2 cup chopped onions

2 cups thinly sliced carrots

1 tbsp. chicken bouillon

3 cups water

1/2 cup uncooked rice

1/4 cup Fulton’s Organic Maple Syrup

1/2 tsp. salt

2 cups milk

Maple Croutons

1 pkg. of Fulton’s Maple Dip for Vegetables

6 slices of bread

INSTRUCTIONS

Soup

Mix onion, carrots, bouillon mix, water, rice, Fulton’s maple syrup and salt in a saucepan. Bring to a boil. Reduce heat, cover and simmer until carrots are tender and rice is cooked.

Place in a blender and blend until smooth. Return to the saucepan heat while stirring in the milk.

Add maple croutons and enjoy.

Croutons

Cut small maple shapes from the slices of bread.

Place 1 tbsp. of the Fulton’s Maple Dip mix in a small paper bag. Place bread shapes into the bag. Shake well.

Bake at 375F in oven for 3 minutes on each side.
